Creamy Mushroom Soup
Ingredients:
- 2 tbsp butter
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 250g fresh mushrooms, sliced
- 2 tbsp flour
- 3 cups broth (chicken or vegetable)
- 1 cup cooking cream
- Salt and pepper to taste
- A pinch of nutmeg (optional)
- Chopped parsley for garnish
Instructions:
- In a pot over medium heat, melt 2 tbsp of butter. Sauté the chopped onion until it becomes translucent, then add the minced garlic and stir for a minute.
- Add the sliced mushrooms and cook, stirring, until they soften and release their moisture.
- Sprinkle 2 tbsp of flour over the mushrooms and stir well. Gradually add the broth, stirring continuously until the mixture becomes smooth and thickens.
- Let the mixture simmer on low heat for 10 minutes.
- Add the cooking cream and stir, letting it cook for another 5 minutes without letting it boil.
- Season with salt, pepper, and a pinch of nutmeg, if desired.
- Serve hot and garnish with chopped parsley. If you prefer a smoother texture, you can blend the soup before adding the cream.
