Orange Basbousa in the Amazing Mold
Ingredients:
- 3 eggs
- 1 cup granulated sugar
- 3/4 cup vegetable oil
- 1 cup orange juice
- Zest of 1 orange
- 1 cup shredded coconut
- 2 packets of baking powder (8g each)
- 21/2 cups semolina (for Harsha)
For the Syrup:
- Orange juice
For the Cream:
- 2 cups orange juice
- 11/2 tbsp pastry cream powder (Crème Pâtissière)
- Sugar to taste
Instructions:
- In a large bowl, whisk together the eggs and sugar until well combined.
- Add the vegetable oil, orange juice, and orange zest, then mix well.
- Stir in the shredded coconut, baking powder, and semolina, and mix until smooth.
- Pour the batter into an oiled mold and bake at 180°C (350°F) for about 30-35 minutes, or until golden and firm.
- While the basbousa is baking, prepare the syrup by heating orange juice in a pot over low heat.
- For the cream, combine 2 cups of orange juice with the pastry cream powder and sugar. Stir continuously over low heat until the mixture thickens into a smooth cream.
- Once the basbousa is baked, pour the syrup over it and top with the orange cream.
