Orange Basbousa in the Amazing Mold 




Ingredients:

  • 3 eggs
  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 1 cup orange juice
  • Zest of 1 orange
  • 1 cup shredded coconut
  • 2 packets of baking powder (8g each)
  • 21/2 cups semolina (for Harsha)

For the Syrup:

  • Orange juice

For the Cream:

  • 2 cups orange juice
  • 11/2 tbsp pastry cream powder (Crème Pâtissière)
  • Sugar to taste

Instructions:

  1. In a large bowl, whisk together the eggs and sugar until well combined.
  2. Add the vegetable oil, orange juice, and orange zest, then mix well.
  3. Stir in the shredded coconut, baking powder, and semolina, and mix until smooth.
  4. Pour the batter into an oiled mold and bake at 180°C (350°F) for about 30-35 minutes, or until golden and firm.
  5. While the basbousa is baking, prepare the syrup by heating orange juice in a pot over low heat.
  6. For the cream, combine 2 cups of orange juice with the pastry cream powder and sugar. Stir continuously over low heat until the mixture thickens into a smooth cream.
  7. Once the basbousa is baked, pour the syrup over it and top with the orange cream.
