Crème Caramel Cake
Ingredients
For the Cake:

2 eggs

¾ cup sugar
-
2 teaspoons baking powder

1 teaspoon vanilla
-
A pinch of salt

1 ½ cups flour
-
¼ cup cocoa powder
-
½ cup oil
-
½ cup milk
For the Crème Caramel:
-
4 eggs
-
1 teaspoon vanilla
-
3 tablespoons powdered milk
-
2 cups liquid milk
-
½ cup sugar
For the Caramel:
-
½ cup sugar
-
¼ cup water
Preparation
-
Prepare the Caramel:
-
In a pan over medium heat, add ½ cup sugar and ¼ cup water. Let it caramelize without stirring until it turns a beautiful golden color.

Pour the caramel into a cake mold and set aside.

Prepare the Crème Caramel:
-
In a blender, add the remaining ½ cup sugar, eggs, vanilla, and both types of milk. Blend well until smooth.

Strain the mixture and pour it over the caramel layer in the cake mold.

Preheat the oven to 180°C (350°F) and start preparing the cake batter.

Prepare the Cake Batter:

In a bowl, whisk the eggs with vanilla and sugar using an electric mixer until the mixture becomes fluffy and creamy.

Add the oil and continue mixing, then gradually add the milk while whisking.

In a separate bowl, sift together the flour, baking powder, salt, and cocoa powder. Mix well.

Gradually add the dry ingredients to the wet mixture, whisking continuously until fully combined.

Assembling and Baking:

Pour the cake batter over the crème caramel mixture in the mold.

Place the cake mold inside a larger baking pan filled with hot water (a water bath).

Bake in the oven for about 60 minutes or until fully cooked.
