Crème Caramel Cake



Ingredients

For the Cake:

  • 2 eggs

  • ¾ cup sugar

  • 2 teaspoons baking powder

  • 1 teaspoon vanilla

  • A pinch of salt

  • 1 ½ cups flour

  • ¼ cup cocoa powder

  • ½ cup oil

  • ½ cup milk

For the Crème Caramel:

  • 4 eggs

  • 1 teaspoon vanilla

  • 3 tablespoons powdered milk

  • 2 cups liquid milk

  • ½ cup sugar

For the Caramel:

  • ½ cup sugar

  • ¼ cup water

Preparation

  1. Prepare the Caramel:

    • In a pan over medium heat, add ½ cup sugar and ¼ cup water. Let it caramelize without stirring until it turns a beautiful golden color.

    • Pour the caramel into a cake mold and set aside.

  2. Prepare the Crème Caramel:

    • In a blender, add the remaining ½ cup sugar, eggs, vanilla, and both types of milk. Blend well until smooth.

    • Strain the mixture and pour it over the caramel layer in the cake mold.

  3. Preheat the oven to 180°C (350°F) and start preparing the cake batter.

  4. Prepare the Cake Batter:

    • In a bowl, whisk the eggs with vanilla and sugar using an electric mixer until the mixture becomes fluffy and creamy.

    • Add the oil and continue mixing, then gradually add the milk while whisking.

    • In a separate bowl, sift together the flour, baking powder, salt, and cocoa powder. Mix well.

    • Gradually add the dry ingredients to the wet mixture, whisking continuously until fully combined.

  5. Assembling and Baking:

    • Pour the cake batter over the crème caramel mixture in the mold.

    • Place the cake mold inside a larger baking pan filled with hot water (a water bath).

    • Bake in the oven for about 60 minutes or until fully cooked.
