Cheddar Sauce
Ingredients
- 3 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 1 cup shredded cheddar cheese
- Feta cheese, as needed
- 1/4 teaspoon salt
- 1 teaspoon chili powder
Method
- Start by placing 2 tablespoons of butter and 2 tablespoons of flour in a small saucepan.
- Heat the butter and flour over medium heat, whisking them together until the mixture becomes frothy.
- Continue whisking for 60 seconds. This mixture will cook for a minute to lightly toast the flour and remove the raw flour taste while maintaining a light golden color. If it starts turning brown, remove it from the heat.
- Slowly add 1 cup of whole milk in a thin stream. Raise the heat slightly and bring it to a boil while constantly whisking.
- It should cook very quickly (about a minute) to prevent the flour from burning.
- Once it reaches a boil, cook the milk. When it's thick enough to leave residue on the spoon, turn off the heat.
- Add the small chunks of cheddar cheese and gradually add feta cheese, one bit at a time, until it melts into the sauce. If necessary, return the pot to low heat to help it melt, but the residual heat should do most of the work.
- Try to melt the cheese at the temperature of the mixture. If it doesn't melt, place it on low heat.
- Finally, add the spices, then mix all the ingredients together well.
