Cheddar Sauce 



Ingredients 

  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • Feta cheese, as needed
  • 1/4 teaspoon salt
  • 1 teaspoon chili powder

Method 

  1. Start by placing 2 tablespoons of butter and 2 tablespoons of flour in a small saucepan.
  2. Heat the butter and flour over medium heat, whisking them together until the mixture becomes frothy.
  3. Continue whisking for 60 seconds. This mixture will cook for a minute to lightly toast the flour and remove the raw flour taste while maintaining a light golden color. If it starts turning brown, remove it from the heat.
  4. Slowly add 1 cup of whole milk in a thin stream. Raise the heat slightly and bring it to a boil while constantly whisking.
  5. It should cook very quickly (about a minute) to prevent the flour from burning.
  6. Once it reaches a boil, cook the milk. When it's thick enough to leave residue on the spoon, turn off the heat.
  7. Add the small chunks of cheddar cheese and gradually add feta cheese, one bit at a time, until it melts into the sauce. If necessary, return the pot to low heat to help it melt, but the residual heat should do most of the work.
  8. Try to melt the cheese at the temperature of the mixture. If it doesn't melt, place it on low heat.
  9. Finally, add the spices, then mix all the ingredients together well.
