Spicy Red Pepper Sauce
Ingredients:
- 4 dried Guajillo chili peppers
- 2 dried Ancho chili peppers
- 2 medium tomatoes
- ½ white onion
- 2 garlic cloves
- 2 cups water
- 1 teaspoon ground cumin
- Salt to taste
- 1 tablespoon vegetable oil

Prepare the Chili Peppers:
- Remove the seeds and stems from the Guajillo and Ancho chili peppers.
- Rinse the chili peppers under water to remove any dust or impurities.

Cook the Chili Peppers:
- Heat 2 cups of water in a pot and add the cleaned chili peppers.
- Simmer over medium heat for 10-15 minutes until the peppers soften.

Roast the Vegetables:
- While the peppers are cooking, roast the tomatoes, onion, and garlic on a skillet or baking sheet until slightly charred.

Blend the Ingredients:
- In a blender, add the cooked chili peppers, roasted tomatoes, onion, garlic, and ground cumin.
- Pour in 1 cup of the chili cooking water.
- Blend until smooth. If the sauce is too thick, gradually add more cooking water until you reach the desired consistency.

Cook the Sauce:
- In a large saucepan, heat the vegetable oil over medium heat.
- Pour in the blended mixture and cook, stirring occasionally, for about 10 minutes.
- Adjust the seasoning with salt to taste.
