Spicy Red Pepper Sauce



Ingredients:

  • 4 dried Guajillo chili peppers
  • 2 dried Ancho chili peppers
  • 2 medium tomatoes
  • ½ white onion
  • 2 garlic cloves
  • 2 cups water
  • 1 teaspoon ground cumin
  • Salt to taste
  • 1 tablespoon vegetable oil

Preparation:

  1. Prepare the Chili Peppers:

    • Remove the seeds and stems from the Guajillo and Ancho chili peppers.
    • Rinse the chili peppers under water to remove any dust or impurities.
  2. Cook the Chili Peppers:

    • Heat 2 cups of water in a pot and add the cleaned chili peppers.
    • Simmer over medium heat for 10-15 minutes until the peppers soften.
  3. Roast the Vegetables:

    • While the peppers are cooking, roast the tomatoes, onion, and garlic on a skillet or baking sheet until slightly charred.
  4. Blend the Ingredients:

    • In a blender, add the cooked chili peppers, roasted tomatoes, onion, garlic, and ground cumin.
    • Pour in 1 cup of the chili cooking water.
    • Blend until smooth. If the sauce is too thick, gradually add more cooking water until you reach the desired consistency.
  5. Cook the Sauce:

    • In a large saucepan, heat the vegetable oil over medium heat.
    • Pour in the blended mixture and cook, stirring occasionally, for about 10 minutes.
    • Adjust the seasoning with salt to taste.
  6. Cool and Serve:

    • Let the sauce cool slightly before serving.
