Spicy Tripe

For Boiling:

4 cardamom pods

2 bay leaves

Preparation Step

Clean the tripe thoroughly (follow proper cleaning methods).

Place the tripe in a pot over heat, add water, quartered onion, cardamom, and bay leaves.

Let it boil over medium heat for 1.5 to 2 hours until tender.

In a separate pan, heat oil and sauté the sliced onion until soft.

Add the hot chili peppers and stir-fry them.

Pour in the tomato juice and tomato paste, stirring well.

Add the cooked tripe and mix everything together.

Season with salt, black pepper, and chili powder to taste.
