Spicy Turkish Grilled Salad 



Ingredients:

  • 2 medium tomatoes, quartered
  • 1 red or green bell pepper, cut into eight pieces
  • 1 medium onion, cut into eight pieces
  • 2 whole garlic cloves (unpeeled)
  • ¼ cup chopped hot chili peppers
  • 1 tablespoon tomato paste
  • ¼ cup chopped parsley
  • 1 teaspoon hot paprika
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon black vinegar
  • 3 tablespoons olive oil

Instructions:

  1. Roast the Vegetables:

    • Place the tomatoes, onion, bell pepper, and garlic (with skin) on a baking tray.
    • Drizzle with a little olive oil and roast in a preheated oven at 180°C (350°F) for 30 minutes until slightly charred.
    • Remove from the oven and let them rest for 2 minutes.
  2. Blend the Ingredients:

    • Squeeze the garlic out of its skin and add it to the roasted vegetables.
    • Place all ingredients in a blender and pulse until roughly blended (not too smooth).
  3. Serve and Store:

    • Serve immediately, and store any leftovers in a jar in the refrigerator.
