Spicy Turkish Grilled Salad
Ingredients:
- 2 medium tomatoes, quartered
- 1 red or green bell pepper, cut into eight pieces
- 1 medium onion, cut into eight pieces
- 2 whole garlic cloves (unpeeled)
- ¼ cup chopped hot chili peppers
- 1 tablespoon tomato paste
- ¼ cup chopped parsley
- 1 teaspoon hot paprika
- ½ teaspoon cumin
- ½ teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon black vinegar
- 3 tablespoons olive oil
Instructions:

Roast the Vegetables:
- Place the tomatoes, onion, bell pepper, and garlic (with skin) on a baking tray.
- Drizzle with a little olive oil and roast in a preheated oven at 180°C (350°F) for 30 minutes until slightly charred.
- Remove from the oven and let them rest for 2 minutes.

Blend the Ingredients:
- Squeeze the garlic out of its skin and add it to the roasted vegetables.
- Place all ingredients in a blender and pulse until roughly blended (not too smooth).

Serve and Store:
- Serve immediately, and store any leftovers in a jar in the refrigerator.
